Ingredients
1 tablespoon olive oil
1 small onion, chopped
1 small green pepper, chopped
2 medium carrots, chopped
1 garlic clove, minced
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
3/4 cup white wine or chicken broth
1 bay leaf
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon pepper
3/4 pound salmon fillets, skinned and cut into 3/4-inch cubes
1/2 pound uncooked medium shrimp, peeled and deveined
3 tablespoons minced fresh parsley

CHINESE DUMPLING SOUP (MEE HUN KUEH)

Ingredients
plain smooth dumpling
3 cup flour
1/2 cup water
water for smoothing the dumpling
1 plate of water
garnish
1 bunch fried dry anchovies
1 bunch blanch brocoli stem
soup
1 pot of stock
1 dash light soy sauce and pepper
Method
50 mins
TO MAKE DUMPLING DOUGH

mix flour with water add bit by bit till flour is till dough is soft .water might not use finish set aside cover with cloth for half hour minimum

TO MAKE DUMPLING
in pot of stock bring to a boil then simmer down
pull a hanful of dough then with one wet hand pull thinly dumpling dough and put into pot of stock
this way the dumpling will be smooth and slippery

add seasoning and gently stir dumpling once or twice so that soup will clear off heat and serve top garnish

INGREDIENTS
4 eggs, hard-boiled

2 Tbsp (30 ml) mayonnaise

4 cup (250 ml) Canadian Mozzarella, grated

½ cup (125 ml) sun-dried tomatoes, minced

2 Tbsp (30 ml) store-bought pesto

4 whole wheat bagels

4 lettuce leaves

DIRECTIONS
1. In a bowl, mash eggs with a fork.

2. Mix with mayonnaise, Mozzarella, tomatoes and pesto.

3. Cut bagels in half.

4. Top with egg mixture and lettuce.
